TOTAL TIME: 2 hours
1 pound yellow or orange split peas
1 box vegetable broth
salt- paper- olive oil
For the caramelized onions
3 onions, thinly sliced
3 Tbsp butter
4 Tbsp balsamic vinegar cream sauce
pinch of sugar
Rinse the fava and boil it with 7-8 cups of water and the broth in medium heat for about 1 ½ hour. Pass it through a food processor. Put the puree in the pot again and warm up, add some salt and pepper.
Peel and slice thin the onions. In a pot put the butter, the sugar, the vinegar
Add the remaining ingredients to a pot and put over high heat.
As soon as the butter and sugar melts, add the onions. Stir to combine and sauté for 5 minutes. Then lower the heat. Wait until the onions turn golden brown. This may take twenty minutes. Set aside to cool. Then put them in the fava and serve with some olive oil.
