YIELD:

Ingredients
2 pounds beef, cut into portions
salt, pepper
1/4 cup olive oil
1 beef broth
2 cups water
3 spring onions
2 pounds spring mix, lettuce or spinach
2 tbsp dill
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp thyme

For avgolemono sauce
1 egg yolk
1 lemon juice

 

In a pot, you put the olive oil and let in a high heat for two minutes. Add the beef and all the seasonings and toss to coat. Add the spring onions and leave them until golden. Add the water and the broth and in medium heat boil for about an hour. Chop the vegetables and add them to the pot. Leave them for 15 minutes. Add some more water if needed.
In a bowl whisk the egg yolk and the lemon juice. Add some of the liquid from the pot and continue whisking. At the end put the avgolemono sauce in the pot and stir.
