Magiritsa is a traditional Greek soup that is served after midnight on Holy Saturday. This is a vegan version though, made with mushrooms instead of meat!

1/2 cup olive oil
2 pounds chopped spinach
6 tablespoons rice
1/4 cup dill finely chopped
1/4 cup parsley finely chopped
1 bunch spring onions finely chopped
2 pounds mushrooms in thick slices
1 cup white wine
4-6 cups water
2 tablespoons salt
1 tablespoon pepper
1 tablespoon garlic powder
1 tablespoon thyme
1 tablespoon oregano
1/ 2 cup heavy cream


1. Pour the olive oil in a large pot and put it on medium to high heat. Add the spring onions, the mushrooms, and the spinach and saute for 5 minutes.
2. Add the spices, the rice, the wine, and the water and boil them for 15- 20 minutes.
3. Add the heavy cream and stir. Continue boiling for 2 more minutes.
