Every year on March 25th, we eat fried cod fish with mashed potatoes ( mpakaliaro skordalia). Here is the easiest recipe that my grandma gave me.
1 bag frozen cod fillets
olive oil and flour for frying
1 cup flour
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon sugar
1 bottle of beer
For the mashed potatoes (skordalia)
8 boiled potatoes
2 tablespoons garlic powder
4 tablespoons lemon juice
5 tablespoons olive oil
1. In a bowl, mix the flour, the baking powder, salt, sugar. Add the beer and mix again. Put it in the fridge and leave it for an hour.
2. Heat 1 inch of oil in a heavy-bottomed skillet over medium-high heat.
3. Dip the fish into a plate with some flour and then into the bowl with the flour batter turning to coat. Fry in the hot oil until golden, 2 to 4 minutes per side. Transfer to a paper-towel-lined plate to drain.
4. For the mashed potatoes – skordalia put all the ingredients in a blender for three minutes on medium speed.
