Ingredients

MEATBALLS:

  • 1 red onion, grated
  • 1 lb ground duck
  • 2 garlic cloves, chopped
  • 4 slices of bread cut in small pieces 
  • 2 eggs
  • 1 tablespoon thyme 
  • 1 tablespoon oregano
  • 1 tablespoon vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 2 tomatoes cut in small pieces
  • 1 carrot shredded
  • 1 zucchini shredded 
  • Gouda cheese, cut in small squares
  • canola oil for frying 

Instructions

  • In a bowl, put all the ingredients except the gouda and canola oil. Use your hands to mix well for a few minutes until the mixture is quite smooth and very well combined.
  • Refrigerate for 20 -30 minutes 
  • Take some meat in your hand and put in the middle a square of gouda. Then roll into a ball. 
  • Heat the oil in a large skillet over medium-high heat. Fry the meatballs for 5 – 6 minutes, until nicely browned all over.
