Ingredients

  • 3 pork chops
  • 2 small potatoes, peeled and sliced ultra-thin
  • 1/2 cup shredded gouda
  • 1/2 cup crumbled feta
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 cup beef broth
  • 3 tbsp melted butter

Instructions

  1. With a knife, make a pocket in the chops.
  2. In a bowl add the potatoes, gouda, feta, spices and butter and stir.
  3. Stuff each chop with the mixture and place them in the slow cooker, with the position with the stuffed pocket angled upward. Add the broth.
  4. Cook on high for 4 hours.
  5. Preheat the oven to 390oF.
  6. In a baking dish, transfer the chops and some of the broth and bake for 30 minutes.
