Ingredients

- 8 lbs Pork shoulder, boneless
- 6 carrots
- 1 onion
- 2 zucchinis
- 3 potatoes
- 2 sweet potatoes
- 1 green pepper
- 1 eggplant
- 3 sticks of celery
- 3 tbsp salt
- 3 tbsp black pepper
- 2 tsp onion powder
- 3 tsp garlic powder
- 2 tsp oregano
- 2 tsp thyme
- 4 cups beef broth
- 1 cup water/ white wine
- 6 tbsp butter
Instructions

- Preheat the oven to 380oF.
- Mix all the spices and rub them well on all the sides of the meat.
- Peel and cut all the veggies and place them in an oval roasting pan.
- Place the meat on top and pour the broth and the wine/ water.
- Add the pieces of butter all over the meat.
- Cook with the lid on for 3 hours.
- Take the lid and cook for 40-50 more minutes.
