Ingredients

    • 1 (2- 3 pounds) boneless chuck roast
    •  1 tbsp salt 
    • 1 tsp ground black pepper
    • 2 tbsp olive oil  
    • 2 cups vegetable broth
    • 2 tsp oregano
    • 1 tsp thyme
    • 1 onion chopped
    • 1 tsp garlic powder 
    • 3 potatoes, peeled and cut into small pieces
    • 2 sweet potatoes, peeled and cut into small pieces
    • 1 zucchini, peeled and cut into small pieces
    • 3 carrots, peeled and cut into small pieces
    • 3 celery ribs, cut into small pieces
    • 1 bay leaf

Instructions

  1. Place everything into the crockpot, cover and cook on low for 10 hours, or high for 5.
