300gr. (1 1/4 cups) sweet potatoes
300gr. (1 1/4 cups) flour
150gr. ( 1 1/2 stick) softened butter
1 teaspoon nutmeg (optional)
1. Boil for 4-5 minutes the sweet potatoes and mashed them.
2. Preheat oven to 350°F.
3. In a bowl put the sweet potatoes, the butter, and the flour and mix them using your hands until you have a dough. Add the nutmeg.
4. Roll it onto a floured surface until about 1/4 inch thick and, using cookie cutters, cut out as many as you can.
5. Place a parchment paper on a baking sheet and then the cookies.
6. Bake for 10-15 minutes.
