YIELD: serves 6-8 

ACTIVE TIME: 10 minutes

TOTAL TIME: 4- 5 hours 

Ingredients

  • 24 vanilla cookies
  • 1 stick butter melted (8 tbsp)
  • 1 1/2 cup heavy cream
  • 1 1/2 cup chocolate chips
  • 1 1/2 cup white chocolate chips
  • 2 tsp Baileys

 

Directions

  1. Pulse cookies in a food processor until finely ground. Add melted butter, and mix until combined and moistened. 
  2. Press the mixture onto the bottom and up the sides of a tart pan. 
  3. Place it in the fridge.
  4. In a pan heat half of the heavy cream. Before it starts boiling, add the chocolate chips. 
  5. Let stand for 1 minute. Using a rubber spatula, stir the mixture until melted and smooth.
  6. Add the Baileys and stir.
  7. Pour mixture over chilled cookie crust and refrigerate until set, at least 2 hours.
  8. In a pan heat the other half of the heavy cream. Before it starts boiling, add the white chocolate chips. 
  9. Let stand for 1 minute. Using a rubber spatula, stir the mixture until melted and smooth.
  10. Pour mixture over the dessert, and refrigerate overnight.
  11. Before serve, add some sprinkles. (optional)
