For the isli

  • 3 cups flour
  • 1 cup olive oil
  • 1 tsp salt
  • 3/4 cup water
  • 1 tsp brown sugar

For the filling

  • 2/3 cup nuts crushed (walnuts, cashews, almonds)
  • 1 tbsp cinammon
  • 1 tbsp brown sugar
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves

For the syrup

  • 1 1/4 cup sugar
  • 1 1/4 cup water
  • 1 1/4 cup honey
  • juice from one lemon

  1. Make the syrup. Combine the honey, sugar, water, and lemon juice in a saucepan, then bring to the boil. Boil for about 10 minutes until the syrup has thickened slightly.
  2. Preheat the oven to 380oF.
  3.  Make the isli. In a bowl mix all the ingredients until you form a non-sticky dough.
  4. In another bowl, add and mix all the ingredients for the filling.
  5. Take a bit from the dough and create a small ball. Place it on your hand and open it up in a circle. Place one spoon from the filling and close it creating a small triangle. Turn it around and with tweezers, pinch them to create the decoration on top.
  6. Place them in a baking pan with some parchment paper and bake for 25 minutes.
  7. Float the isli in the syrup a few at a time, count to 5 and turn them over to make sure they soak up plenty of liquid. Wait 5 more seconds and, take them out with a fork.
  8. Sprinkle with leftover filling if you want.
