For the Crumble Topping:

  • 4 tbs butter melted
  • 3/4 cup flour
  • 1/3 cup sugar
  • 1/4 tsp cinnamon

For the Apple Cake:

  • 2 cups flour -plus 3 tbsp 
  • 1/4 teaspoon salt
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg 
  • 1 tsp cloves 
  • 1/2 cup butter, room temperature
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla 
  • 1/3 cup milk
  • 3 apples peeled, cored and thinly sliced
  • powdered sugar for dusting if desired

For the sauce

  • Custard sauce:
  • 6 egg yolks
  • 1/2 cup sugar
  • 1 1/2 cups whole milk
  • 2 teaspoons vanilla extract


For the Crumble Topping:

  1. Melt 4 tablespoons of butter in a small bowl. Add the flour, sugar, and 1/4 teaspoon cinnamon. Mix with a fork to combine. Set aside.

For the Cake:

  1. Preheat oven to 350 oF. Lightly grease and flour the bottom and sides of a baking pan. Line the bottom with a round of parchment paper and set aside.
  2. Peel, core and thinly slice the apples and place them in a large mixing bowl. Toss the apples with 3 tablespoons of flour and set aside.
  3. In the bowl of a stand mixer combine the butter and sugar. Beat for several minutes until light and fluffy. Scrape down the sides of the bowl as needed.
  4. Beat in the eggs, add the vanilla and mix just until blended.
  5. Add the flour, salt, baking powder, cloves, nutmeg and cinnamon and mix for 2-3 minutes.
  6.  Add the milk and blend until smooth. Add the apples and mix with a spatula.
  7. Pour the batter into the pan and spread evenly. Sprinkle with the crumble topping 
  8. Bake for 50-60 minutes. 
  9. Cool the cake and serve with the sauce. 

For the sauce

  1. Whisk egg yolks and sugar together in a medium bowl for 2-3 minutes.
  2. Pour milk into a saucepan and boil. 
  3. Remove milk from heat and, while whisking continuously, pour into egg mixture until smooth, then return all of the mixture to saucepan.
  4. Over medium heat, cook custard for 3-5 minutes. 
  5. Remove from heat and stir in vanilla extract, then transfer to a serving container.
