Ingredients

  • 4 fillets pink salmon
  • 3-4 potatoes peeled and cut in small pieces
  • 1 pound frozen spinach
  • juice from one lemon
  • juice from one orange
  • 1/4 cup olive oil
  • 1/3 cup water
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp white ground pepper

Instructions

  1. Boil the spinach and drain it. 
  2. Boil the potatoes and in a bowl, mix them with 2 tbsp olive oil, some salt and pepper.
  3. Preheat the oven to 380oF.
  4. Mix all the spices in a bowl.
  5. In a baking dish put the spinach and on top the salmon.
  6. Sprinkle with the spices.
  7. Pour the olive oil, the juice from lemon and orange,  and the water.
  8. Bake for 20-30 minutes
