Ingredients

    • 8 lbs pork loin roast
    • 6 carrots
    • 2 onions
    • 5 potatoes
    • 3 sweet potatoes
    • juice of two lemons
    • juice of two oranges
    • 1 tsp rosemary
    • 3 tsp salt
    • 3 tsp black pepper
    • 2 tsp onion powder
    • 3 tsp garlic powder
    • 2 tsp oregano
    • 2 tsp thyme
    • 1/2 cup olive oil 
    • 1/4 cup mustard
    • 1/4 cup honey
    • 2-3 cups water

Instructions

    1. Preheat the oven to 380oF.
    2. Mix all the spices and rub them well on all the sides of the meat. 
    3. Peel and cut all the potatoes, onions and carrots and place them in an oval roasting pan.
    4. Place the meat on top.
    5. In a shaker mix and blend the orange juice, lemon juice, water, mustard, honey, olive oil and pour it in the roasting pan.
    6. Cook with the lid on for 3 hours.
    7. Take the lid and cook for 40-50 more minutes.
