Ingredients

- 8 lbs pork loin roast
- 6 carrots
- 2 onions
- 5 potatoes
- 3 sweet potatoes
- juice of two lemons
- juice of two oranges
- 1 tsp rosemary
- 3 tsp salt
- 3 tsp black pepper
- 2 tsp onion powder
- 3 tsp garlic powder
- 2 tsp oregano
- 2 tsp thyme
- 1/2 cup olive oil
- 1/4 cup mustard
- 1/4 cup honey
- 2-3 cups water
Instructions

- Preheat the oven to 380oF.
- Mix all the spices and rub them well on all the sides of the meat.
- Peel and cut all the potatoes, onions and carrots and place them in an oval roasting pan.
- Place the meat on top.
- In a shaker mix and blend the orange juice, lemon juice, water, mustard, honey, olive oil and pour it in the roasting pan.
- Cook with the lid on for 3 hours.
- Take the lid and cook for 40-50 more minutes.
