INGREDIENTS

  • 2 pounds cleaned squids or/and cuttlefish, cut in pieces
  • 2 pounds onions, chopped 
  • 1 cup olive oil
  • 1 tsp oregano
  • 1cup white wine
  • 3 garlic cloves, chopped
  • 1 tsp thyme
  • 3 tablespoons tomato paste
  • 1/4 cup water
  • 12 bay leaves
  • 1/2 tsp sugar
  • Salt and pepper to taste

 

INSTRUCTIONS

1. Heat the olive oil in a large pot over medium-high heat. When the oil is hot, add the onions and the garlic. Stir to coat with oil and sauté, stirring occasionally, until it begins to color, about 5-6 minutes.
2. Stir in the squids and let it cook until their liquids are gone.
3. In a small bowl mix the tomato paste and the 1/4 cup of water until combined. Add it in the pot and stir.
4. Add all the other ingredients and stir. Simmer for 40-60 minutes. After an hour, taste a piece of squids. It should be tender. If it’s not, keep simmering.
