INGREDIENTS

  • 2 cups chickpeas
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1 cup olive oil
  • 2 cups water
  • 2-3 bay leaves
  • 2 tbsp dried oregano 
  • salt and freshly ground pepper
  • 2 tomatoes sliced 

 

INSTRUCTIONS

1. To prepare the chickpeas, put them in a bowl with water overnight.
2. Drain the chickpeas and put them in a pan with enough water to cover them. Boil them for 1- 2 hours until tender. Add more water if necessary in order not to dry.
3. Drain the chickpeas.
4. Preheat the oven to 380oF.
5. In a baking pan/ pyrex put the chickpeas and the spices and stir.
6. Pour the water and the olive oil.
7. On top put the tomato slices and bake for 50-60 minutes, until there is no water in the baking dish.
