Souvlakia 

Ingredients

Pork souvlakia

    • 2 pounds boneless pork cut in pieces
    • 1 tbsp salt
    • 1 tsp thyme
    • 1 tsp black ground pepper
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp oregano
    • 4 tbsp olive oil 

    Veggie Souvlakia

    • 2 green bell peppers cut in pieces
    • 1 eggplant peeled and cut in pieces
    • 1 zucchini peeled and cut in pieces
    • 1 onion peeled and cut in pieces
    • 1 cup grape tomatoes
    • 1 tsp salt
    • 1 tsp thyme
    • 1 tsp black ground pepper
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp oregano
    • 5 tbsp olive oil
    • 5 tbsp balsamic vinegar

    Mushroom souvlakia

    • 1 pound mushrooms peeled and cut in pieces
    • 1 tsp salt
    • 1 tsp thyme
    • 1 tsp black ground pepper
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp oregano
    • 4 tbsp olive oil
    • 2 tbsp balsamic vinegar
    • juice from one lemon 

     

  • Directions

  • For pork souvlakia
    1. In a large bowl, mix all the ingredients together. 
    2. Cover and refrigerate for 1-2 hours.
    3. Thread pork onto skewers. You can add some veggies in between. 
    4. Prepare an outdoor grill. Brush grates with a little oil and heat over medium-high heat. Place the souvlaki on the grill until well browned. Be sure to turn the souvlaki evenly to cook on all sides, about 5 minutes total.

    For veggie souvlakia 

    1. In a large bowl, mix all the ingredients together. 
    2. Cover and refrigerate for 1-2 hours.
    3. Thread the veggies onto skewers.
    4. Prepare an outdoor grill. Brush grates with a little oil and heat over medium-high heat. Place the souvlaki on the grill until well browned. Be sure to turn the souvlaki evenly to cook on all sides, about 5 minutes total.

    For mushroom souvlakia 

    1. In a large bowl, mix all the ingredients together. 
    2. Cover and refrigerate for 1-2 hours.
    3. Thread the mushrooms onto skewers.
    4. Prepare an outdoor grill. Brush grates with a little oil and heat over medium-high heat. Place the souvlaki on the grill until well browned. Be sure to turn the souvlaki evenly to cook on all sides, about 5 minutes total.
