Souvlakia
Ingredients
Pork souvlakia

- 2 pounds boneless pork cut in pieces
- 1 tbsp salt
- 1 tsp thyme
- 1 tsp black ground pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 4 tbsp olive oil
Veggie Souvlakia
- 2 green bell peppers cut in pieces
- 1 eggplant peeled and cut in pieces
- 1 zucchini peeled and cut in pieces
- 1 onion peeled and cut in pieces
- 1 cup grape tomatoes
- 1 tsp salt
- 1 tsp thyme
- 1 tsp black ground pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 5 tbsp olive oil
- 5 tbsp balsamic vinegar
Mushroom souvlakia
- 1 pound mushrooms peeled and cut in pieces
- 1 tsp salt
- 1 tsp thyme
- 1 tsp black ground pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 4 tbsp olive oil
- 2 tbsp balsamic vinegar
- juice from one lemon

Directions
- For pork souvlakia
- In a large bowl, mix all the ingredients together.
- Cover and refrigerate for 1-2 hours.
- Thread pork onto skewers. You can add some veggies in between.
- Prepare an outdoor grill. Brush grates with a little oil and heat over medium-high heat. Place the souvlaki on the grill until well browned. Be sure to turn the souvlaki evenly to cook on all sides, about 5 minutes total.
For veggie souvlakia
- In a large bowl, mix all the ingredients together.
- Cover and refrigerate for 1-2 hours.
